After years of research in the field, we’ve selected an exceptional variety of grains prioritizing non-refined whole wheat flour harvested from the best farmers in the US. We took advantage of the locally sourced organic produce from various farmer's markets across California.

We proudly handcraft all of our fresh pasta daily using sustainable and organically grown heirloom grains such as Khorasan, Einkorn, Emmer, Spelt, and Amber Durum. From our appetizers to our pasta and down to our desserts, we are happy to say that everything that comes from our kitchen is made in-house.
